What you need

Four dynamic microphones on four arms.
Cardioid, close, and low-profile arms so nothing crosses the camera frame. Four open microphones in one room means four times the room noise, so proximity is the control.

A production console.
The RØDECaster Pro II or a comparable console gives four preamps with enough gain, four independent headphone outputs with individual level control, multitrack recording to its own media, sound pads and phone-caller integration — without a computer in the recording chain.

Four sets of closed-back headphones or IEMs.
IEMs stay out of frame on video, which is why filmed podcasts use them.

Video, if it is filmed.
The RØDECaster Video and Video S fold HDMI switching into the same console, which removes a separate switcher. Otherwise take the cameras into an ATEM Mini Pro ISO and record every angle separately.
